On my shopping list

I’ll be making up the following meals for this week, and using Saturday morning to cook, cook, cook.

Bell & Cheese Omelette

Spanish Style Shrimp with Garlic

Pork Tenderloin with Pomegranate Glaze – cook day

Sauteed Chicken Breast over something…I will determine the day I cook 🙂

Chicken & Sausage Gumbo with Roasted Potatoes

I will also be freezing meatballs, hamburgers, banana bread, muffins, slices for smoothies, marinated pork loin, and easy freezer sauteed chicken breast, and extra gumbo.

Here are the recipes for what I will be putting up.

How Long can I freeze food?

Leftovers from last menu- green beans, cherry tomatoes, onions, red and green leaf lettuce, red bell pepper, baking potatoes, cilantro, lemon, chuck roast, petite sirloin, bacon, yogurt, buttermilk, pork and beans, corn tortillas (lots!)

Leftovers from previous menus-

raisins, chicken broth, honey, pasta sauce, cream of chicken soup, jalapeno jelly, sundried tomatoes

Paula’s Pot Roast & Barefoot Buttermilk Mashed Potatoes – this recipe calls for red wine (we’ve listed possible subs in the grocery list next to the wine)

Eggs in a Red Pepper Flower  & Huevos Rancheros – I only use the red pepper in the rancheros

Turkey Tenderloin & Green Beans – the recipe for the tenderloin is on the package.  My favorite?  the applewood.

Steak Salad– okay, this is confusing, but i would skip making the vinaigrette and use bottled (like zesty italian)  but any homemade vinagrette would be great.  I’m using our cheaper greens, and skipping the blue cheese.  If you are doing this recipe before the green beans above, save some pecans back. (I had you buy extra).  Also make up some extra onion rings to use on the pork chops. And I use the sirloin steak instead of flank.  sorry lots of changes.

French Fried Pork Chops

combo recipe from Pioneer Woman and French’s – use the leftover onion rings for the pork chops.  They won’t be as dry as french’s.  Just don’t over break up, and pat them on.  should work.

Lunches and Breakfasts: deli meat, chili with beans, bread, grapes, yogurt, cantaloupe

Parker’s Beef Stew Recipe

this recipe needs to be started a full day in advance.  Cross Rib Roasts (not to be confused with a standing rib roast) are a cheaper cut of meat and can become tough from the shoulder muscle running through. (If I understand correctly).  Texas Meat recommends stewing the meat, and I trust the Barefoot Contessa to do it well.  For some reason I’ve been craving stew lately, too.

I’d throw a loaf of Sundried Tomato Bread on the table as well.

Honey BBQ Riblets

Prep: 15min. Cook: 3hrs. Yield: 6 servings


  • 2lbs pork rib tips
  • garlic powder or minced garlic
  • salt
  • pepper
  • 1 cup water
  • 2 TB liquid smoke
  • 2 cups prepared BBQ sauce


  1. Season ribs with salt, pepper, and garlic.
  2. Place on a medium hot grill and sear on each side.  Continue grilling until ribs are nearly done.
  3. Fill bottom of a broiler pan with liquid smoke and water.  Place ribs on rack over broiler pan.  Cover or seal.
  4. Place in the oven for 2 to 4 hours.  Longer you leave them, the more tender they will be.
  5. Uncover last 10 minutes, Brush with BBQ sauce  and then serve.

Chili Dogs

An easy go-to for moms.  Heat the dogs, Serve on buns, and slather with chili.  Kids love, and it makes dinner a breeze.

If you just can’t handle straight Cantaloupe and Watermelon, here’s a little way to spice them up and still dine on the flavor and savings of the season.
